蒟蒻學名 Amorphaphallus Konjac  

英名Elephant Foot或onjac;中文名有雷公槍、菎蒻、魔芋、蛇芋、蒻頭、鬼芋等,是天南星科蛇芋屬多年生宿根性塊莖草本植物。其性狀,由羽狀製片而成,脈網狀、柄、花草性暗褐色肉,穗狀花序,有包苞,雌雄同株開花後可結1-4粒種,下球莖為球狀。原產印度、錫蘭、自古即在中國大陸西南地區有所栽,近年來尤在四川、雲南、貴州一帶大量種植,約一千年前自我國傳入日本,今在群馬縣、宮城縣、福島鳥縣栽培相當多。
Konjac flour is made from the tubers(roots) of various species of Amorphophallus ,a plant that belongs to the family of the Araceae and was originally from South East Asia. It is the source of a water soluble fiber and has been consumed for more than 2,000 years in China and Japan as an important part of oriental dishes. Konjac is called “JU RUO” in Chinese, and called “KONNYAKU” by the Japanese in accordance with the Chinese pronunciation for “ JU RUO ”.

蒟蒻之應用

蒟蒻製品除了傳統之板狀蒟蒻,近年來由於素食人口之增加,及國人對健康訴求之觀念提升,蒟蒻之加工產品更琳瑯滿目,這些產品可說是符合國人口味、口感之特殊產品。除素食加工品外,仍有相當廣泛之用途,如麵類、飲料、冷凍食品、水產煉製品、畜肉製品、餅乾、麵包、蛋糕、冰淇淋、漬物、油炸物、調味料、乳化安定劑、成膜劑、醫藥、減肥食品、化妝品、果膠類食品。在食品加工及工業用途上有相當大之應用空間,但從業者須選擇適合之蒟蒻食材,方能提高產品品質及降低生產成本。
